Sheet pan Greek chicken


INGREDIENTS

  • 6 boneless skinless chicken thighs
  • 1 can pitted olives
  • 1 can beans: either pinto, garbanzo, cannellini
  • 4 small to medium potatoes, par boiled then cut in 1/2
  • Sprig fresh rosemary, crushed
  • 4 cloves garlic, smashed then diced
  • 1 cup fresh radishes, cut in half
  • Splash red wine vinegar
  • Splash olive oil 

DIRECTIONS

Put oven rack in middle position and preheat to 350 degrees F, convection.

Mix all ingredients together in a large mixing bowl, then spread evenly on baking sheet and bake for 22 mins.
