- 3 pork chops, boneless, thick cut
- 2 eggs, beaten
- 1 cup quinoa
- 1 cup oats
- 1 tbsp paprika
- 1/2 tbsp garlic powder
- 1/2 tbsp salt and pepper
Preheat the oven to 350 degrees. Lightly oil a large baking pan, I use the Pampered Chef Large Bar Pan.
Grind quinoa into flour, I use a Nutri-bullet. Place flour in a shallow bowl.
Then do the same to the oats and add to the bowl along with remaining spices, mix well.
Beat eggs in a 2nd shallow bowl.
Place 1 cutlet at a time into a large plastic bag and using the flat side of a meat tenderizer, pound until they are about 1/4″ thick.
Dip cutlets into egg, then flour mixture. Coat evenly, shake off excess and place on top pre-oiled baking pan.
Bake for 10 minutes, then flip pieces over and bake for an additional 10 mins.
