Sheet pan Sherry chicken with Gnocchi


INGREDIENTS

  • 4 boneless, skinless chicken thighs
  • 1 box gnocchi
  • 2 Tbsp capers
  • 2 cups baby portobellos cut in quarters
  • 1 red onion, julienned
  • 2 Tbsp Sherry wine vinegar
  • 1/4 cup olive oil
  • 3 tsp granulated garlic
  • Freshly ground black pepper to taste

DIRECTIONS

Put oven rack in middle position and preheat to 350 degrees F, convection.

Mix all ingredients together in a large mixing bowl, then spread evenly on baking sheet and bake for 22 mins.
