Sheet pan Greek chicken
INGREDIENTS
- 6 boneless skinless chicken thighs
- 1 can pitted olives
- 1 can beans: either pinto, garbanzo, cannellini
- 4 small to medium potatoes, par boiled then cut in 1/2
- Sprig fresh rosemary, crushed
- 4 cloves garlic, smashed then diced
- 1 cup fresh radishes, cut in half
- Splash red wine vinegar
- Splash olive oil
DIRECTIONS
Put oven rack in middle position and preheat to 350 degrees F, convection.
Mix all ingredients together in a large mixing bowl, then spread evenly on baking sheet and bake for 22 mins.
