- 6 cups watermelon, cut into 1″ cubes
- 1/2 cup fresh mint leaves
- zest from 1 lime
- 1 lime, juiced
- 2 cups of feta (Dodoni brand is best unless you are in Greece Serena:)), cut into 1″ cubes
- Olive oil
- fresh cracked pepper
In a medium sized bowl, whisk together olive oil, fresh lime juice and black pepper to create a dressing.
Place the cubed feta and watermelon along with the fresh, whole mint leaves in a large shallow bowl. I try to mix them in as I’m placing them in the bowl so you don’t have to mix to combine later and break the cubes.
Pour dressing over top and sprinkle with lime zest and fresh pepper.
