• 1 cup gluten-free flour blend
  • 1 cup crushed mixed nuts
  • pinch of salt
  • 1/4 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ground cardamom
  • 1/4 cup of coconut oil, softened
  • 1/4 cup chopped dates
  • 1 tsp vanilla extract
  • 1 large orange


Preheat oven to 350°F and line a large cookie sheet with parchment paper.

Combine flour, baking soda, salt and spices in a mixing bowl.

Zest the orange add to the bowl. Peel the orange and add the flesh to the food processor along with the dates, coconut oil and vanilla. Puree until smooth then add to dry ingredients and mix until a nice dough forms. You can add some orange juice if the dough is too dry or more flour if it’s too wet.

Roll the dough into balls, then flatten in to patties.

Bake for 15 minutes, but watch so they don’t brown too much. The edges should be gold.

Cool on a cooling rack for about 30 minutes.
