Mixed Berry and Pineapple Cobbler


INGREDIENTS

  • 1 cup mixed nuts, ground
  • 1 cup rolled oats, ground
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 1 large egg
  • 1 cup plain or vanilla Greek yogurt
  • 1/4 cup apple sauce
  • 1/4 cup honey or agave nectar
  • 2 tsp vanilla extract
  • 3 cups mixed berries and/or tropical fruit mix, frozen or fresh
  • 1-2 tbsp butter
  • 1/4 cup brown sugar

DIRECTIONS

Preheat oven to 350°F convection.

Grind the nuts then the oats in a food processor and place in a large mixing bowl.

Add the baking powder, baking soda, sugar and salt to the mixing bowl and combine.

In a separate bowl, lightly beat the egg, whisk in yogurt, honey, apple sauce and vanilla, mixing until combined.

Add wet ingredients to dry, fold to incorporate.

Grab a large cast iron skillet and place on high heat. Add 1-2 tbsp of butter, once it has melted but before it begins to brown, add fruit in a single layer; you may need more or less, but the idea is to cover the bottom of the skillet. Sprinkle brown sugar over top and leave on high heat for 3 minutes, do not mix.

Remove skillet from heat and pour batter over top, spreading to edges, then place in the oven.

Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
