Pushcart Onion Sauce


  • 10 medium yellow onions
  • 1/4 cup olive oil
  • 1/4 cup ketchup
  • 1/2 cup tomato paste
  • 1 cup preserved tomatoes
  • 1/4 cup red wine vinegar
  • 4 tbsp salt
  • 1 tsp cinnamon



Using a large slow cooker, mine is 7qt. Set heat on low and cover the base of the stone pot with the olive oil.

Thinly slice all of the onions and add to the pot. Add all of the remaining ingredients, cover and stir every 2 hours.

Let it cook for 8-10 hours.

I jar and refrigerate for up to 1 month.
