- 1 cup quinoa
- 2 cups liquid (water, chicken or vegetable broth)
- 2 tbsp olive oil
- 2 tbsp minced sun dried tomatoes
- 1/2 cup chopped tomatoes
- 1 tsp salt
- 1 tsp pepper
- 1 tsp sugar
- 1 tsp garlic granules (or 1 fresh clove, finely chopped)
- 2 tbsp chopped parsley
Add all ingredients except the quinoa to a sauce pot, bring to a boil then add the quinoa.
Turn heat down to the lowest setting. Cover and cook for 15 minutes.
Remove pot from heat and let stand for 5 more minutes, covered. Don’t remove the lid.
Once you remove the lid, you should see little spirals (the germ) separating from and curling around the quinoa seeds. Fluff the quinoa gently with a fork before serving.
