Garbanzo Salad


INGREDIENTS

  • 1 (15-ounce) can garbanzo beans, drained and rinsed
  • 1 (15-ounce) can whole kernel corn (or 1 ear fresh uncooked corn)
  • 4 cups baby spinach or Arugula
  • 1 lemon, zested & juiced
  • 1/2 cup chopped celery
  • olive oil
  • 2 cloves fresh minced garlic
  • S&P

DIRECTIONS

Combine all then chill for 30 mins.
