Garbanzo Salad
INGREDIENTS
- 1 (15-ounce) can garbanzo beans, drained and rinsed
- 1 (15-ounce) can whole kernel corn (or 1 ear fresh uncooked corn)
- 4 cups baby spinach or Arugula
- 1 lemon, zested & juiced
- 1/2 cup chopped celery
- olive oil
- 2 cloves fresh minced garlic
- S&P
DIRECTIONS
Combine all then chill for 30 mins.
