Lentil Kale Salad


  • 1 cup cooked lentils
  • 1 bunch kale, cleaned and chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 large clove garlic, crushed
  • 1 cup minced parsley
  • 1/4 cup pumpkin seeds
  • 1/4 cup sesame seeds
  • 2 tbsp hemp hearts
  • 2 tbsp chia seeds
  • Apple cider vinaigrette


While the lentils are cooking prepare the apple cider vinaigrette directly in to a medium mixing bowl.

Remove the ribs from the kale and set aside. Dice kale in to bite sized pieces, do the same with the carrots and celery.

Add the rest of the ingredients.

Once the lentils are done, add them to the mixture, toss gently and serve.
