Simple Bean Salad


  • 1/4 cup onion, diced
  • 1 tsp Dijon mustard
  • 2 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • 1 can beans, your favorite kind
  • 1/2 cup mixed chopped herbs, parsley, chives, dill or oregano
  • Kosher salt and freshly ground pepper


Whisk Dijon and vinegar in a bowl. Slowly whisk in oil until combined. Add all other ingredients, season to taste.
