Zucchini Bean Salad


INGREDIENTS

  • 2 limes with zest
  • 1/4 cup olive oil
  • S&P
  • 1 large clove garlic, crushed
  • 1 cup minced parsley
  • 1 cup chopped cilantro
  • 1 can black beans
  • 1 small zucchini (use veggetti)
  • 2 stalks celery, diced
  • 1 fresh ear uncooked corn, cut kernels off. OR 1 can of corn
  • 2 tbsp hemp hearts
  • 2 tbsp chia seeds
  • 1/2 cup slivered almonds

DIRECTIONS

In a large mixing bowl, whisk together: lime juice and zest, olive oil, garlic, S&P. Drain beans and rinse parsley and cilantro. Use the veggetti for the zucchini. Cut the longer strands to about 3-4 inches, add to bowl. Add the rest of the ingredients, mix well.
