- 1 large English cucumber, peeled and grated
- 1/4 cup mayonnaise
- 2/3 cup plain non-fat greek yogurt
- 1/4 cup fresh chopped dill
- 1 Tbsp white vinegar
- Juice from 1 lemon + zest
- 1 Tbsp olive oil
- 1 Tbsp minced garlic
Place a medium sized colander over a large bowl. Peel and grate cucumber in to the colander. Squeeze well to drain the liquid. I drink the water or you can discard it.
Mince garlic and place in a microwavable bowl. Cover with olive oil and a pinch of salt. Microwave for 45 seconds. It will be burning hot when it’s finished so wear gloves. — If you don’t like to use a microwave, you can also sautée the garlic in a pan.
Combine all ingredients together in a glass bowl and mix to combine. Refrigerate for at least 1-2 hours.
