Bean Salad


INGREDIENTS

  • 1 can corn, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1/4 cup pickled banana peppers, diced
  • 1 1/4 pickled lemon, minced (optional)
  • Seeds and nuts
  • Diced raw veggies:
    • 1 cup carrots
    • 1 cup bell peppers
    • 1/2 cup radish 
    • 3 Scallions

DRESSING

  • 1 Tbsp fish sauce
  • 1 Tbsp soy sauce
  • 1 Tbsp seasoned rice vinegar
  • 1/4 cup olive oil
  • Juice from 1 lime

DIRECTIONS

  1. Wisk the dressing together in the bottom of a large bowl.
  2. Mince the pickled lemon if using and add to the bowl
  3. Drain and rinse the beans
