Sautéed Runner Beans


INGREDIENTS

  • 5 fresh medium sizes tomatoes, chopped
  • 4 cups runner and or bush beans, stems removed
  • 3 garlic cloves, minced
  • 1 medium sweet onion, julienned
  • 1/4 cup olive oil
  • 3 tbsp red wine vinegar
  • 1 handful of fresh oregano, chopped
  • salt, to taste
  • 1 tsp crushed red pepper

DIRECTIONS

Coat a large frying pan with olive oil and add the onion and garlic, sauté until translucent. Add chopped tomatoes and beans, cook for 5 mins. Add oregano, salt and red pepper, cook another 3 mins. Add red wine vinegar and remaining olive oil. Turn heat off.
