Brown rice Kimchi breakfast bowl


INGREDIENTS

  • 1/2 cup cooked brown rice
  • 1/2 c kimchi, roughly chopped
  • 1 tbsp sesame oil
  • 2 tsp soy sauce
  • 2 tsp toasted sesame seeds
  • 1 fried egg
  • 2 scallions, diced
  • 2 sheets Nori seaweed crumbled

DIRECTIONS

  1. Cook the brown rice according to package directions. I make 1-2 cups the night before or use leftover rice.
  2. Make the dressing by mixing the: sesame oil, soy sauce, 1 of the scallions and sesame seeds together.
  3. Mix the rice, dressing and kimchi together.
  4. Fry the egg and place on top of the bowl.
  5. Sprinkle with crumbled Nori and some fresh scallion.
