Brown rice Kimchi breakfast bowl
INGREDIENTS
- 1/2 cup cooked brown rice
- 1/2 c kimchi, roughly chopped
- 1 tbsp sesame oil
- 2 tsp soy sauce
- 2 tsp toasted sesame seeds
- 1 fried egg
- 2 scallions, diced
- 2 sheets Nori seaweed crumbled
DIRECTIONS
- Cook the brown rice according to package directions. I make 1-2 cups the night before or use leftover rice.
- Make the dressing by mixing the: sesame oil, soy sauce, 1 of the scallions and sesame seeds together.
- Mix the rice, dressing and kimchi together.
- Fry the egg and place on top of the bowl.
- Sprinkle with crumbled Nori and some fresh scallion.
