Roasted Potatoes


INGREDIENTS

  • 4 medium potatoes, we like Yukon Gold or Red
  • 1/4 cup olive oil
  • 1/2 tsp baking soda
  • 3 tsp salt
  • 2 tsp granulated garlic

DIRECTIONS

  1. Pre-heat oven to 350F convection
  2. Wash and scrub potatoes
  3. Pierce each potato with a fork a few times all around
  4. Cook in microwave (I know I KNOW, but just do it), for 3 mins, then turn over (they will be burning hot) and cook for an additional 3 mins
  5. With oven mits on, place potatoes on cutting board and slice in to 4 wedges, you want big pieces like steak fries
  6. Season with olive oil, salt, baking soda and garlic, tossing gently
  7. Place on baking dish and bake for 25 mins
