Kisir with Farro
INGREDIENTS
- 1 cup Pearled Farro
- 2 cups water
- 1-2 tbsp tomato puree
- 1 onion, diced
- 2 tbsp lemon juice
- 1tbsp cumin
- 1 tsp salt
- ½ tsp garlic granules (or 1 fresh clove, finely chopped)
- 2 tbsp chopped herbs (parsley and mint)
DIRECTIONS
Place farro in measuring cup and cover with water for 15 mins. Chop onions and sauté in medium sized pot with olive oil, add spices and roast. Then add tomato paste and parsley. Add faro and 1/2 cup water and lemon juice. Bring to boil, stirring for 15-20 mins:)
