Bean Salad
INGREDIENTS
- 1 can corn, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1/4 cup pickled banana peppers, diced
- Mixed seeds, sesame, pumpkin, flax, pepeita
- Diced raw veggies:
- 1 cup carrots
- 1 cup bell peppers
- 1/2 cup radish
- 3 Scallions
DRESSING
- 1 Tbsp fish sauce
- 1 Tbsp soy sauce
- 1 Tbsp Dijon mustard
- 1 Tbsp seasoned rice vinegar
- 1/4 cup olive oil
- Juice from 1 lime
DIRECTIONS
- Whisk the dressing together in the bottom of a large bowl.
- Add all veggies and toss to coat.
- Drain and rinse the beans, add to bowl along with the seeds, fold in to mixture gently.
