Simple Bean Salad
INGREDIENTS
- 1/4 cup onion, diced
- 1 tsp Dijon mustard
- 2 tablespoons red wine vinegar
- 1/4 cup olive oil
- 1 can beans, your favorite kind
- 1/2 cup mixed chopped herbs, parsley, chives, dill or oregano
- Kosher salt and freshly ground pepper
DIRECTIONS
Whisk Dijon and vinegar in a bowl. Slowly whisk in oil until combined. Add all other ingredients, season to taste.
