Lemongrass Rice


INGREDIENTS

  • 4 cloves garlic, minced
  • 3 Thai chili’s, diced
  • 1 Tbsp fresh ginger, minced
  • 2 stalks lemongrass, minced
  • 1 shallot, diced
  • Juice and zest from 2 limes
  • 2 Tbsp palm sugar, grated
  • 3 Tbsp fish sauce
  • 1 Tbsp soy sauce
  • 2 scallions, diced
  • 1 cup rice, any kind you like but I am a fan of Basmati, I’m half Indian dahling!

DIRECTIONS

  1. Place 2 cups water or broth of your choice (vegetable or chicken)
  2. Add all the other ingredients except the rice
  3. Bring to a boil
  4. Add the rice and turn down the heat to low and timer for 20 mins if you are using Basmati rice
  5. Top with diced scallion ans serve
