French Peasant Soup


INGREDIENTS

  • 2 medium sized potatoes
  • 2 carrots
  • 2 stalks of celery
  • 2 medium sized onions
  • 1 small head of cabbage
  • 12 oz of cannellini beans
  • S&P
  • 1/4 cup fresh parsley
  • 1 teaspoon thyme
  • 2 bay leaves
  • 10 cups of water

DIRECTIONS

  1. Dice all of the vegetables, place in to a stockpot then cover with cold water. Add S&P, thyme, bay leaves and parsley.
  2. Cover and bring to boil slowly, then simmer for 1-2 hours. Season to taste then let chill.
  3. Discard the bay leaves.
  4. Add the beans. then purée the soup in a food processor.
  5. Garnish with olive oil and fresh parsley.
