French Peasant Soup
INGREDIENTS
- 2 medium sized potatoes
- 2 carrots
- 2 stalks of celery
- 2 medium sized onions
- 1 small head of cabbage
- 12 oz of cannellini beans
- S&P
- 1/4 cup fresh parsley
- 1 teaspoon thyme
- 2 bay leaves
- 10 cups of water
DIRECTIONS
- Dice all of the vegetables, place in to a stockpot then cover with cold water. Add S&P, thyme, bay leaves and parsley.
- Cover and bring to boil slowly, then simmer for 1-2 hours. Season to taste then let chill.
- Discard the bay leaves.
- Add the beans. then purée the soup in a food processor.
- Garnish with olive oil and fresh parsley.
