Summer Squash Soup


  • 5lbs summer, crookneck and/or zucchini, diced
  • 6 cloves of garlic, roughly chopped
  • 1 large yellow or white onion, diced
  • 2 Tbsp, herbs de provence
  • 4 stalks celery, diced
  • S&P
  • 32 oz chicken broth


Prep all ingredients.

Set a large crockpot to high.

Add all ingredients and cook on high for 4-5 hours.

Let cool then purée the soup in a Nutri-bullet.
