Lemongrass Rice
INGREDIENTS
- 4 cloves garlic, minced
- 3 Thai chili’s, diced
- 1 Tbsp fresh ginger, minced
- 2 stalks lemongrass, minced
- 1 shallot, diced
- Juice and zest from 2 limes
- 2 Tbsp palm sugar, grated
- 3 Tbsp fish sauce
- 1 Tbsp soy sauce
- 2 scallions, diced
- 1 cup rice, any kind you like but I am a fan of Basmati, I’m half Indian dahling!
DIRECTIONS
- Place 2 cups water or broth of your choice (vegetable or chicken)
- Add all the other ingredients except the rice
- Bring to a boil
- Add the rice and turn down the heat to low and timer for 20 mins if you are using Basmati rice
- Top with diced scallion ans serve
