Greek Lentil Soup (Soupa Fakes)
INGREDIENTS
- 1 cup french lentils, washed
- 1/4 cup olive oil
- 32 oz vegetable or chicken broth
- 1/4 cup red wine vinegar
- 12 oz chopped tomatoes
- 2 cups chopped onions
- 2 cups chopped carrots
- 2 cups chopped celery
- 1-2 Bay leaves
- 1 Tbsp fresh Greek oregano
- 2 sprigs fresh rosemary
- 4 cloves garlic, minced
- S&P
DIRECTIONS
Wash lentils and place in stock pot.
Cover with water, then a dd all other ingredients.
Bring to a boil then turn down to simmer for 45 mins.
