Horitiki Salata


INGREDIENTS

  • 4 large ripe tomatoes, cut in quarters
  • 1 English cucumber, sliced thick in rounds
  • 2 bell peppers, any colors you like, sliced in rounds
  • 1 large red onion, thinly sliced
  • 1/3 pound feta cheese, sliced in 4 thick slabs
  • 20 kalamata olives
  • 12 pickled pepperoncini peppers
  • 1/2 cup olive oil
  • Red wine vinegar
  • 1/2 tbsp Greek oregano, fresh or dried
  • S+P to taste

DIRECTIONS

This serves 4, divide the first 7 ingredients evenly between 4 gorgeous salad bowls.

Pour vinegar in to a measuring cup, add oregano, S+P, drizzle in olive oil while whisking vigorously to emulsify.

Drizzle with dressing and serve.
