Summer Squash Soup
INGREDIENTS
- 5lbs summer, crookneck and/or zucchini, diced
- 6 cloves of garlic, roughly chopped
- 1 large yellow or white onion, diced
- 2 Tbsp, herbs de provence
- 4 stalks celery, diced
- S&P
- 32 oz chicken broth
DIRECTIONS
Prep all ingredients.
Set a large crockpot to high.
Add all ingredients and cook on high for 4-5 hours.
Let cool then purée the soup in a Nutri-bullet.
