Spicy Pork Noodle Bowl w/ fresh herbs
INGREDIENTS
- 1 pound rice Ramen noodles
- 1 Tbsp olive oil
- 1½ pound ground pork (We use the spicy sausages and uncase them)
- 6 cloves garlic, smashed then diced
- 1 1-inch piece ginger, grated
- 2 scallions, light parts chopped, green parts reserved for garnish
- 1 onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- Handful of herbs like mint, basil and cilantro leaves, washed
- ¼ cup salted, roasted peanuts, chopped
- 1/2 cup pickled radishes and onions, sliced
Dressing
- 4 Tbsp rice vinegar
- 2 Tbsp soy sauce
- 2 Tbsp black vinegar (Chinkiang vinegar)
- 2 Tbsp chili crisp oil (like Lao Gan Ma brand)
- 2 Tbsp Hoisin Sauce
- 1 Tbsp grated Palm sugar
DIRECTIONS
Make the dressing by whisking rice vinegar, soy sauce, black vinegar, chili crisp oil, hoisin and palm sugar until sugar dissolves. Set aside.
Bring a large pot of water to boil.
Heat oil in a large frying pan over medium-high heat. Add onions, garlic, celery and carrot and roast until browned. Add splash of rice vinegar and soy sauce to caramelize. Then add pork and fry, breaking meat into small pieces until there’s no liquid in the pan, about 5 minutes. Pour dressing over meat and cook an additional 5 mins.
Cook noodles according to instructions. Drain and divide between bowls. Top with pork, herbs, peanuts and radishes, to taste.
