Sauteéd Spinach and Feta
INGREDIENTS
- 2 (10-ounce) packages frozen chopped spinach, defrosted and drained
- 1 large sweet onion, julienned
- 3 scallions, diced
- 1 bunch fresh dill, diced
- 1 block of feta cheese (about 1/2 lb)
- 1/4 cup olive oil
- 4 cloves garlic, crushed

DIRECTIONS
Pour 1/4 cup of olive oil in to a large frying pan, add onions and salt, sauté until translucent. Add the garlic and black pepper and roast until onions begin to turn color. Add spinach and cook for 5 mins, then incorporate the dill, scallions and feta and mix in well. Remove from heat, add lemon juice and and more crumbled feta.
